The healthy fats in Guacamole combine ideally with a protein packed egg and toast meal to provide a punch of hearty nutrition.

Ingredients for Guacamole:

  • 1 big ripe avocado (make sure it’s ripe!)
  • 2 tablespoon finely chopped onion
  • 2 tablespoon finely chopped tomatoes
  • Juice of 1/2 lemon (nimbu)
  • Chopped coriander
  • Chopped green chillies (optional)
  • Salt and pepper to taste

Method:
Cut avocado in half, scoop out the flesh in a bowl and mash it with a fork. Stir in onions, tomatoes, coriander, chillies, salt, pepper and lemon juice. Taste and adjust the lemon juice if you want to add more.

Take a multigrain toast and spread the guacamole evenly on it. Top it with egg of your choice- boiled, fried or poached. Sprinkle some salt and pepper and enjoy a super healthy and yummy breakfast.
